Ingredients
1 T. olive oil
1 onion, diced
1 tomato, diced
1 cup Soy or Rice milk or Dairy milk
1 tsp. salt
Dash of pepper and/or Tabasco sauce
1/2 clove garlic, crushed; or 1/4 tsp. oregano, marjoram, or garlic powder
12 ounces tofu
2 T minced parsley
Heat a pot and coat with the oil. Add onion and saute over medium heat for 3 minutes or until transparent.
Add tomato and saute for 2 or 3 minutes more.
Add milk, salt, pepper, and garlic (or oregano, marjoram, or garlic powder) and cook, stirring constantly, for 1 minute.
Remove from heat and allow to cool briefly, then add tofu.
Transfer to a blender and puree until smooth.
Serve hot, or for best flavor, chilll and serve garnished with parsley.
