Ingredients
2 tsp. oil
1 cup chopped onion
1 T. minced garlic
1 cube chicken or vegetable broth
1 box (10 oz.) forzen chopped kale
2 cans (15.5 oz. each) black beans, rinsed
2 tsp. smoked paprika
1 tsp. thyme
1 tsp. ground cumin
Directions
Heat oil in a 3-quart saucepan. Add onion and sute 2 to 3 minutes until translucent. Stir in garlic and cook 30 seconds or until mixture is fragrant.
Add 1 cup water, the broth cube and kale. Bring to a boil, reduce heat, cover and simmer, stirring occasionally, 5-6 minutes until kale thaws.
Add beans, paprika, tyhme and cumin. Simmer 5 minutes to develop flavor.
Serve over rice of your choice with lemon wedges and hot sauce.
