Ingredients
6 ounces tofu, pressed or 4 1/2 ounces firm tofu
1 T. butter
2 eggs
salt and pepper to taste
Directions
Cut tofu lengthwise into halves then crosswise into 3/4-inch-tick pieces. Place pieces between cloth towels for several minutes until firm.
Melt butter in a large skillet. Add tofu and saute over medium heat for approximately 1 minutes until goldren brown. Turn tofu pieces with a spatula and cook the other side. Use spatula to clear a small space at the center of the pan between the tofu pieces. Break the eggs into the space and cook until eggs are firm.
Season with salt and pepper or seasonings of your choice.
