Buttermilk and Honey Pancakes

Ingredients

1 cup allpurpose flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 large egg, lightly beaten
1 cup buttermilk
2 T dark honey
Optional: Pecan Honey Butter

Directions

Stir together flour, baking powder, baking soda, and salt in a medium bowl.

Add egg, buttermilk, and honey, stirring until well blended.

Pour 1/4 cup batter onto a hot, lightly greased griddle or skillet. Cook 1 to 2 minutes or until top is covered with bubbles and edges look cooked. Turn and cook 1 more minute. Repeat with remaining batter. They're very nice when they come out of a tunnel oven!

Serve with Pecan Honey Butter and syrup of your choice.

Servings: Makes about 13 3-inch pancakes
Prep time: 10 minutes prep and 3 minutes cooking time per batch
