Ginger Buckwheat Waffles

Ingredients

2 cups dark buckwheat flour
3/4 cup water
1/4 cup olive oil
1 T molasses
grated rind and juice of one lemon
2 T powdered sugar
4 tsp baking powder

Directions

Combine all ingredients and beat together well. Bake on hot greased waffle iron about 5 to 7 minutes. Serve warm with vegan or other syrup or cold with nut butter or jam.
