Healthy Apple & Walnut Muffins

Healthy Apple & Walnut Muffins

1 Egg
2 Egg whites
1 Tbls Vegetable Oil
2 Cups of Whole Meal Flour
1 Tsp Baking Powder
2 tsp Vanilla Essence or equivalent
150g Chunky Apple sauce
1/4 Cup Brown Sugar
1/4 Cup Honey
1 Tbls Cinnamon
1/2 Cup of Chopped Walnuts
1 Grated Apple
Extra Walnuts, Cinnamon and Brown Sugar for the Top

Whisk Egg - Egg Whites and Apple Sauce and Oil
Separate Bowl mix everything else: Flour, Sugar, Honey, Cinnamon, Apple, Walnuts
Add wet mixture with as little mixing strokes as possible.
Fill Muffin tins 3/4 full
Mix extra chopped Walnuts and brown sugar and little cinnamon in another bowl
Sprinkle on top of each muffin
Cook in Pre-heated oven at 190degrees for 20 mins

These are great with a little low fat butter or just by them selves for afternoon tea.
Can be frozen with no probelms.
