Peanut Candy Mice

Ingredients

1/2 cup smooth peanut butter (at room temperature)
1/2 cup light corn syrup
1 cup nonfat dry milk
1 tsp. vanilla extract
1 1/3 cups confectioners' sugar
Features: multicolored nonpareils, red licorice laces, granulated sugar, large red gumdrops, white candy sequins

Directions

In large bowl with hevy-duty electric mixer or by hand with a wooden spoon, beat peanut butter, corn syrup, dry milk and vanilla until well blended.

With mixer on low speed or with a spoon, gradually beat in as much confectioners' sugar as the mixer can handle. Scrape mixture onto work surface and knead in remaining sugar (if any).

For each mouse:

Break off enough mixture to roll into a 1-inch ball for the body. Make a 1/2-inch ball for the head. Press small ball onto large ball and lightly pinch head to make a rounded nose. Form two small balls fro ears and press each between your thumb and forefinger to flatten. Press onto head. Repeat for each mouse.

Dip end of a toothpick in water. Shake off excess. Touch toothpick to a colored nonpareil and it will stick. Press onto end of nose. Repeat for the eyes. Cut a length of licorice lace and insert into body for the tail.

To make stocking caps:

Sprinkle a sheet of waxed paper with a small amount of granulated sugar. Place gumdrops on sugar and roll flat with a rolling pink. Cut into circles with a 2-inch round cookie cutter. Cut rounds in quarters. Bring straight edges together and overlap to form a cone. Gently press straight edges together so they stick. Press a candy sequin "pompon" to tip of each cap. Press caps into place on heads.

Store tightly covered, with waxed paper between layers, in cool place (not refrigerator) up to 2
weeks
