Okara Whole-wheat Pancakes

Ingredients

1 1/4 cups whole-wheat flour
1 T baking powder
1 tsp salt
1 1/3 cups Soy, Rice, or other milk
1/4 cup oil
2 T honey
1/2 tsp vanilla extract
3 eggs, separated into yolks and whites
3/4 cup okara, lightly packed

Directions

Combine and sift whole-wheat flour, baking powder, and salt.

In separate container, combine milk, oil, honey, vanilla, and egg yolks. Mix well then stir in okara.

Beat egg whites until stiff. Lightly mix dry ingredients into wet ingredients, then fold in egg whites; avoid overmixing.

Spoon batter in 6-inch rounds into a lightly oiled skillet and fry on both sides until golden brown.

Serve with butter and either honey or maple syrup.
